How to make Homemade Chicken Tortilla Soup




  • 16 oz. Low Sodium Chicken Broth
  • 1 lb Chicken
  • Taco Seasoning


  • Red Pepper
  • Yellow Pepper
  • Green Pepper
  • Red onion
  • Cilantro


  • Mrs Dash: Chicken flavor
  • Garlic Powder
  • Olive Oil


Step by Step Instructions:

  1. Get a pan, place it on the stove, add 2 cans low sodium Chicken Broth and place on medium heat
  2. In a grilling pan, place it on the stove, add 2 tbsp of olive oil, add chicken and place on medium heat with lid on
  3. Dice red onion, assorted peppers, cilantro, garlic powder, Mrs. dash, and place in pan with chicken broth, let all contents come to a boil, then back it off an place on simmer. 
  4. Flip chicken over to make sure it is getting cooked on both sides, use a wooden spoon to chop and shred the chicken
  5. Add Taco seasoning to chicken, about 1/2 of small package (low sodium), Ortega is good.
  6. Let it cook on medium heat.
  7. Once chicken is cooked through, and seasoning is mixed around, pour the contents of the chicken broth pan into the pan with the chicken. Let it simmer for a minute or two.
  8. Eat up.

*You can add, cheese, a little sour cream, avocado, or tortilla chips to it to make it a little tastier.
